Nicole’s Restaurant opened its doors in 1986. The 1920’s two-story home with original tin ceilings was home to several area businesses including a restaurant, bar, pizzeria, grocery and butcher.
The question people most often ask is “who is Nicole?”, and “why is it named Nicole’s?”. To answer those questions … after graduation from Saint Rose in 1986, owner Margaret’s dad – Louis Carciobolo Sr., purchased the building and leased it to her. In return, Margaret named the restaurant “Nicole’s” after the first grandchild in the family. Through the years people ask for “Nicole” but the name is just a namesake. Husband and wife team James Gavin (JP) and Margaret Carciobolo own and operate Nicole’s Restaurant and Catering while raising their four children; Quinten, Dylan, Alivia and Ethan in the Bethlehem community.
Nicole’s has evolved from a classic Italian restaurant to an eclectic mix of global cuisine and offers a unique and relaxed dining experience. JP is always eager to showcase his interpretation of fusion cuisine, serving unique twists of classic dishes as well as incorporating new dishes featuring items such as elk, bison and venison.
The catering division of Nicole’s – Nicole’s Special Events and Catering has grown into one of the Capital Regions premiere caterers.
Through the years Nicole’s has been a long time favorite of many people of the capital region.
